Easy Baingan Bharta Recipe: Make Dhaba-Style Baingan Ka Bharta at Home This Winter

Baingan Bharta, a smoky, flavorful eggplant dish, is a winter favorite in India. Traditionally cooked in a dhaba-style with roasted eggplants and aromatic spices, it pairs perfectly with roti, paratha, or steamed rice. Here’s an easy recipe to recreate this comforting dish at home.

Ingredients:

  • 2 large eggplants (baingan)
  • 2 tablespoons oil (preferably mustard oil for authentic flavor)
  • 1 teaspoon cumin seeds
  • 2 medium onions, finely chopped
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2 medium tomatoes, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions:

1. Roast the Eggplants:

  • Wash the eggplants and prick them with a fork.
  • Roast them over an open flame or in an oven until the skin is charred and the inside is soft.
  • Let them cool, then peel the skin and mash the pulp lightly.
2. Prepare the Bharta Base:

  • Heat oil in a pan, add cumin seeds, and let them sizzle.
  • Add onions, garlic, ginger, and green chilies, and sauté until golden brown.
3. Add Tomatoes and Spices:

  • Add tomatoes, turmeric, red chili powder, coriander powder, and salt.
  • Cook until the tomatoes soften and the oil starts separating from the masala.
4. Combine Eggplant and Masala:

  • Add the mashed eggplant to the pan and mix well.
  • Cook for 5–7 minutes on medium heat, stirring occasionally.
5. Garnish and Serve:

  • Turn off the heat and garnish with fresh coriander leaves.
  • Serve hot with roti, paratha, or steamed rice.
Tips for Dhaba-Style Flavor:

  • Use mustard oil for a slightly pungent, authentic taste.
  • Roast eggplants directly on the gas flame for a smoky flavor.
  • Adjust spices according to your preference; dhaba-style bharta is usually rich and spicy.
