Sweet Corn Soup Recipe Explain

Ingredients:

  • 1 cup sweet corn kernels (fresh, canned, or frozen)
  • 1 medium onion, finely chopped
  • 1 small carrot, finely chopped or grated
  • 1-2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1-2 green chilies, finely chopped (optional, for slight heat)
  • 1-2 tbsp oil (vegetable or sesame)
  • 4 cups vegetable broth (or water with 1 vegetable stock cube)
  • 1 tsp cornflour (cornstarch)
  • 3 tbsp water (for cornflour slurry)
  • Salt, to taste
  • 1/2 tsp black pepper powder
  • 1 tsp soy sauce (optional, for flavor depth)
  • Spring onions, chopped for garnish
  • A few drops of sesame oil (optional, for authentic flavor)
Instructions:

1. Cook the Vegetables:

  • Heat oil in a saucepan over medium heat.
  • Add garlic, ginger, and green chilies and sauté for 30 seconds until fragrant.
  • Add onions and carrot and sauté for 2-3 minutes until softened.
2. Add corn and Broth:

  • Add the sweet corn kernels and stir for a minute.
  • Pour in the vegetable broth or water and bring to a boil.
  • Simmer for 5-7 minutes until the vegetables are cooked.
3. Blend the Soup (Optional):

  • For a smoother soup, blend half the soup using a hand blender or in a regular blender and then return it to the pan.

4. Thicken the Soup:

  • In a small bowl, mix cornflour with 3 tbsp water to make a smooth slurry.
  • Slowly add the slurry to the simmering soup while stirring continuously to avoid lumps.
  • Simmer for 2-3 minutes until the soup thickens slightly.
5. Season the Soup:

  • Add salt, black pepper, and soy sauce (if using).
  • Stir well and taste to adjust seasoning.
6. Serve:

  • Ladle the hot soup into bowls.
  • Garnish with chopped spring onions and a few drops of sesame oil for authentic flavor.
  • Serve immediately with crusty bread or fried noodles for a complete starter.

1. Sweetness:

o If using fresh corn, the soup will be naturally sweet. Adjust sugar slightly if desired.

o Canned corn is also great but may need a little extra sweetness or seasoning adjustment.

2. Creamy Version:

o Add 2-3 tbsp cream or milk at the end for a richer, creamier soup.

3. Spice Variations:

o For a slightly spicy soup, add white pepper or a pinch of chili flakes.

o ginger and garlic can be increased for extra warmth.

4. Thick or Thin Soup:

o Adjust cornflour slurry for your desired consistency. More slurry = thicker soup; less = thinner, lighter soup.

5. Vegan Option:

o Use plant-based milk or coconut milk if making it creamy and keep it completely vegan.
