Kambu Koozh Recipe | Traditional Pearl Millet Porridge

Kambu Koozh is a traditional South indian fermented porridge made from kambu (pearl millet), a highly nutritious millet widely grown and consumed in tamil Nadu and other parts of India. This cool, tangy, and refreshing drink/porridge is especially popular in summer as it helps beat the heat and keeps the body hydrated.

Ingredients:

  • 1 cup kambu (pearl millet) flour or whole pearl millet
  • 4 cups water (for cooking)
  • Salt to taste
  • Optional: buttermilk or yogurt (for added tanginess)
  • Optional toppings: chopped onions, green chilies, coriander leaves, roasted cumin powder
Preparation Steps:

Using Pearl Millet Flour:

1. Cook the Flour
In a heavy pan, add pearl millet flour to boiling water, stirring continuously to avoid lumps. Cook on medium heat for 5-7 minutes until the mixture thickens to a porridge consistency.

2. Cool and Ferment
Let the cooked porridge cool down to room temperature. Cover and keep it in a warm place for 8-12 hours to ferment. Fermentation gives the koozh its characteristic tangy flavor.

3. Add salt and Water
After fermentation, add salt and more water to adjust the consistency. You can also add a little buttermilk or yogurt if you prefer a more sour taste.

4. Serve
Serve chilled or at room temperature. Garnish with chopped onions, green chilies, coriander, and roasted cumin powder for added flavor.

Using Whole Pearl Millet:

1. Soak and Grind
Soak whole pearl millet grains overnight. Drain and grind with water to a smooth batter.

2. Cook the Batter
Cook the batter similarly as above until it thickens, then proceed with fermentation.
