Kambu Choru is a traditional South indian dish made with kambu (pearl millet), cooked like rice and often enjoyed with spicy curries or chutneys. Ingredients:

  • 1 cup pearl millet (kambu)

Preparation Steps:

1. Rinse Pearl Millet
Wash the pearl millet thoroughly under running water to remove dust and impurities. Drain well.

2. Dry Roast Millet (Optional)
For a nuttier flavor, dry roast the millet in a pan on medium heat for 2-3 minutes until aromatic. This step is optional but recommended.

3. Prepare Tempering (Optional)
In a pressure cooker or pot, heat oil or ghee. Add mustard seeds, cumin seeds, dried red chilies, curry leaves, chopped ginger, and onions. Sauté until onions turn translucent.

4. Cook the Millet
Add the rinsed millet to the pot and stir for a minute to coat the grains with the tempering. Pour in 2 cups of water and add salt to taste.

5. Pressure Cook or Simmer
Close the lid and pressure cook for 2-3 whistles or cook uncovered on low heat with a tight lid until the millet is cooked and water is absorbed (about 15-20 minutes). Fluff with a fork.

6. Serve Hot
Serve Kambu Choru hot with sambar, rasam, or any spicy curry of your choice.
