Little Millet Rice (Samai Rice) Recipe

Ingredients:

  • 1 cup Little Millet (Samai)
  • 2 cups water
  • 1 tbsp oil or ghee
  • 1 tsp mustard seeds
  • 1 tsp urad dal (optional)
  • 1-2 dried red chilies or green chilies (optional)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Fresh coriander leaves for garnish (optional)
Instructions:

1. Rinse and Soak: Rinse 1 cup of little millet thoroughly under running water. Soak it in water for about 15-20 minutes. This helps in quicker cooking and better texture.

2. Roast (Optional): Dry roast the soaked millet in a pan on medium flame for 2-3 minutes to enhance its nutty flavor.

3. Tempering: Heat oil or ghee in a pan. Add mustard seeds and let them splutter. Then add urad dal, dried red chilies, and asafoetida. Fry till the dal turns golden brown.

4. Cooking Millet: Drain the soaked millet and add it to the pan. Stir for a minute to mix well with the tempering.

5. Add Water and Cook: Pour 2 cups of water and add salt to taste. Bring it to a boil, then reduce heat to low, cover the pan, and let it simmer for 15-20 minutes until the millet absorbs all water and becomes soft.

6. Rest and Fluff: Turn off the heat and let it rest, covered, for 5 minutes. Fluff with a fork and garnish with chopped coriander leaves.

7. Serve: Enjoy it as a healthy side dish with curry, sambar, or as a light meal.
