Ingredients:- 1 cup Little Millet (Samai)
- 2 cups water
- 1 to 1½ cups plain yogurt (curd), beaten
- Salt to taste
- 1 tbsp oil or ghee
For Tempering:- 1 tsp mustard seeds
- 1 tsp urad dal (split black gram)
- 1-2 dried red chilies, broken
- 1-2 green chilies, slit (optional)
- A pinch of asafoetida (hing)
- Few curry leaves
- 1 tbsp grated ginger (optional)
- Fresh coriander leaves, chopped (for garnish)
Instructions:1.
Cook the Millet: Rinse the little millet well and soak for 15 minutes. Drain and cook with 2 cups water in a pressure cooker or pot until soft and fluffy (about 2 whistles or 15-20 mins on stovetop).2.
Cool the Millet: Spread the cooked millet on a plate or tray to cool down to room temperature.3.
Mix with Yogurt: Once cooled, transfer the millet to a bowl. Add beaten yogurt and salt. Mix well to combine. Adjust yogurt quantity based on preferred consistency—some like it thick, some a little runny.4.
Prepare Tempering: Heat oil or ghee in a small pan. Add mustard seeds and let them splutter. Add urad dal and fry until golden. Add dried red chilies, green chilies, curry leaves, asafoetida, and grated ginger. Sauté for a minute.5.
Combine: Pour this tempering over the millet-curd mixture and mix gently.6.
Garnish & Serve: Garnish with fresh coriander leaves. Serve chilled or at room temperature. It’s refreshing and perfect for hot days or light meals.
