Manga Sadam Recipe (Raw Mango Rice)

Ingredients:

  • 1 cup cooked rice (preferably cooled and fluffy)
  • 1 cup raw mango, peeled and grated
  • 1-2 green chilies, chopped
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal (split black gram)
  • 1/2 tsp chana dal (split bengal gram)
  • 1/4 tsp asafoetida (hing)
  • 10-12 curry leaves
  • 1 tbsp oil (preferably sesame or coconut oil)
  • 1 tsp turmeric powder
  • 2 tbsp roasted peanuts or cashews
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions:

1. Prepare Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Then add urad dal, chana dal, curry leaves, green chilies, and asafoetida. Sauté until dals turn golden.

2. Cook Mango: Add grated raw mango and turmeric powder. Cook on medium heat for 4-5 minutes until the raw smell of mango disappears and it softens slightly.

3. Mix Rice: Add the cooked rice and salt to the pan. Mix gently to combine everything well, ensuring the mango is evenly spread.

4. Add Nuts: Toss in roasted peanuts or cashews for crunch and flavor.

5. Garnish and Serve: Garnish with fresh coriander leaves. Serve warm or at room temperature.

  • Cook mango well to remove the raw aroma and soften it.
  • Use freshly cooked or day-old rice, but ensure it’s fluffy, not sticky.
