Kondai Kadalai Biryani Recipe (Black Chickpea Biryani)

Ingredients:

  • 1 cup kondai kadalai (black chickpeas), soaked overnight and boiled
  • 1.5 cups basmati rice
  • 2 tbsp oil or ghee
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 1/2 cup yogurt (curd)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 2 bay leaves
  • 4-5 cloves
  • 3-4 green cardamoms
  • 1-inch cinnamon stick
  • Salt to taste
  • 1/4 cup chopped coriander leaves
  • 1/4 cup chopped mint leaves
  • Juice of half a lemon
  • Water as needed
Instructions:

1. Cook Rice: Rinse basmati rice thoroughly and soak for 30 minutes. Boil water with salt and whole spices (bay leaves, cloves, cardamoms, cinnamon). Add rice and cook until 70% done. Drain and set aside.

2. Prepare Chickpeas: Soak kondai kadalai overnight and boil until soft but not mushy.

3. Make Masala: Heat oil or ghee in a pan. Add cumin seeds, sliced onions, and sauté until golden. Add ginger-garlic paste and green chilies, cooking until fragrant.

4. Add Tomatoes & Spices: Add chopped tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until oil separates from the masala.

5. Add Yogurt & Chickpeas: Lower heat, add yogurt and stir well. Add boiled kondai kadalai and cook for 5-7 minutes so the chickpeas absorb the spices.

6. Add Herbs & Lemon: Mix in garam masala, chopped coriander, mint leaves, and lemon juice.

7. Layer Biryani: In a heavy-bottomed pot, layer half the chickpea masala and half the rice. Repeat layers.

8. Dum Cooking: Cover tightly and cook on low heat for 15-20 minutes to let flavors meld.

9. Serve: Fluff gently and serve hot with raita or salad.

  • Use soaked and boiled kondai kadalai for softness without mushiness.
  • Soaking rice and chickpeas well improves digestion and cooking quality.
  • Use fresh herbs for enhanced aroma.
  • Cook on low heat during dum to avoid burning.
  • For added texture, garnish with fried onions or roasted nuts.
  • Adjust spice levels to taste.
