Vazhaipoo Usili Recipe explain

Ingredients:

  • 1 medium banana flower (vazhaipoo), cleaned and chopped finely
  • 1 cup toor dal (split pigeon peas) or chana dal (split bengal gram)
  • 2 dried red chilies
  • 1/2 tsp mustard seeds
  • 1/4 tsp asafoetida (hing)
  • 1 tbsp oil
  • Salt to taste
  • 1 sprig curry leaves
  • 1 onion, finely sliced (optional)
  • Fresh coriander leaves for garnish
Instructions:

1. Prepare banana Flower:
Peel outer layers of the banana flower until you reach the soft inner florets. Chop finely and wash thoroughly to remove the sap and bitterness. Soak in water mixed with a little turmeric and salt for 10 minutes, then drain.

2. Prepare Dal Mixture:
Soak toor dal or chana dal for 1-2 hours. Drain and grind coarsely with dried red chilies and minimal water to a crumbly texture (not a paste).

3. Cook Dal Mixture:
Heat a non-stick pan or tava. Spread the dal mixture thinly like a pancake. Cook on medium heat, flipping occasionally, until both sides are dry and cooked. Let it cool.

4. Crumble Usili:
Once cooled, crumble the cooked dal into coarse crumbs using your fingers or a fork. Set aside.

5. Cook banana Flower:
Heat oil in a pan. Add mustard seeds and let them splutter. Add asafoetida and curry leaves. Add sliced onions if using, sauté till translucent. Add the chopped banana flower, salt, and cook on medium heat until soft and moisture evaporates (about 10-15 minutes).

6. Add Usili:
Add the crumbled dal usili to the cooked banana flower. Mix well and cook for another 5-7 minutes, stirring occasionally, until the mixture is dry and well combined.

7. Garnish & Serve:
Garnish with fresh coriander leaves. Serve hot with steamed rice and sambar or rasam.

Tips:

  • Properly clean and soak banana flower to reduce bitterness and remove sap.
  • Cook the dal mixture thinly and evenly to get a perfect crumbly usili texture.
  • Adjust cooking time based on moisture content in banana flower to avoid sogginess.
  • Use fresh curry leaves for authentic flavor.
  • You can substitute toor dal with chana dal as per preference.
