Sorakkai Kurma (Bottle Gourd Korma) Recipe
- 2 cups bottle gourd (sorakkai), peeled and chopped into cubes
- 1 cup fresh grated coconut
- 2 tbsp cashew nuts
- 2 green chilies
- 1-inch ginger piece
- 1 tsp fennel seeds (saunf)
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 small onion, chopped
- 1 tsp oil
- 1/2 tsp mustard seeds
- A few curry leaves
- Salt to taste
- 1/2 cup water (adjust for desired consistency)
- Fresh coriander leaves for garnish
In a blender, combine grated coconut, cashew nuts, green chilies, ginger, fennel seeds, cumin seeds, coriander seeds, and chopped onion. Add a little water and grind to a smooth paste.2. Cook Bottle Gourd:
Heat oil in a pan. Add mustard seeds and curry leaves; let them splutter. Add the chopped bottle gourd and sauté for 2-3 minutes.3. Add masala Paste:
Pour the ground coconut-cashew masala into the pan. Mix well with the bottle gourd.4. Simmer:
Add salt and water. Cover and cook on medium heat for 10-15 minutes or until the bottle gourd is tender and the kurma thickens.5. Finish & Garnish:
Adjust salt and consistency. Garnish with fresh coriander leaves before serving.6. Serve:
Serve hot with steamed rice, chapati, or paratha.Tips:
