Sweet potatoes are naturally sweet, nutritious, and versatile, making them perfect for a comforting curry. This spiced sweet potato curry combines aromatic spices, creamy coconut milk, and tender sweet potatoes for a flavorful, wholesome dish that pairs beautifully with rice, roti, or quinoa.

Ingredients

For 3–4 servings:

2 medium sweet potatoes, peeled and cubed

1 tablespoon oil or ghee

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 medium onion, finely chopped

2 cloves garlic, minced

1-inch piece ginger, grated

2 green chilies, chopped (optional)

1 teaspoon turmeric powder

1 teaspoon ground coriander

1/2 teaspoon cumin powder

1 teaspoon garam masala

1/2 teaspoon red chili powder (adjust to taste)

1 cup coconut milk

1/2 cup water or vegetable broth

Salt to taste

Fresh coriander leaves for garnish

Optional: squeeze of lemon juice for tanginess

Step 1: Sauté the Aromatics

Heat oil or ghee in a pan over medium heat.

Add mustard seeds and cumin seeds; let them splutter.

Add onions and sauté until golden brown.

Stir in garlic, ginger, and green chilies; cook for 1–2 minutes until fragrant.

Step 2: Add Spices

Add turmeric, ground coriander, cumin powder, red chili powder, and salt.

Stir for 30 seconds to toast the spices lightly, enhancing their flavor.

Step 3: Cook the Sweet Potatoes

Add cubed sweet potatoes and mix well to coat with the spices.

Pour in coconut milk and water or broth.

Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, until sweet potatoes are tender.

Step 4: Finish the Curry

Sprinkle garam masala over the curry and stir gently.

Adjust consistency by adding a little more water or coconut milk if needed.

Optional: add a squeeze of lemon juice for brightness.

Step 5: Serve

Garnish with fresh coriander leaves.

Serve hot with steamed rice, naan, or roti.
