There are many differences between "Cassia" and real cinnamon (Cinnamomum verum). The biggest difference is that both are obtained from different trees. The castor shell tree belongs to the Cinnamomum cassia family, while the real cinnamon tree belongs to the Cinnamomum verum family. Apart from this, there is a lot of difference in the chemical properties of both, especially the amount of coumarin. While the amount of coumarin is very high in castor shell (Cassia). At the same time, the amount of coumarin in real cinnamon is less.
