BABY POTATO STIR FRY RECIPE
Ingredients:
- 25 Baby potatoes
- 1 tsp Red chilli powder
- 1 tsp Coriander powder
- 1/2 tsp Roasted jeera powder
- A pinch Hing powder
- Salt to taste
- 2 tbsp Oil
- Curry leaves
Method:
- Wash and cook baby potatoes so that it is soft but not over cooked.
- It should retain its shape so that it does not get mushy while stir frying.
- Peel off the skin and make sure that moisture is not present before marination.
- Add all the spice powders and mix gently so that it is coated all over.
- Add just a teaspoon of oil and mix with spiced potatoes.
- Let it get marinated for an hour in refrigerator.
- Heat a heavy bottomed pan and put 2 table spoons of oil.
- Put marinated baby potatoes and curry leaves and fry in medium low flame.
- Stir now and then to prevent it from getting burnt.
- Fry till it gets crispy and turn nice golden brown.
- Baby potato stir fry is ready.Serve with rice and dhal.
- You can have it as a starter also.
- If you are going to prepare it for guests you can do the marination previous day and keep it overnight in refrigerator.
- Healthy and no guilt starter snack since it is not deep fried.
