The tomatoes
50 g/2 fresh wholemeal
breadcrumbs
2 teaspoons chopped mixed
herbs
lemon slices, to garnish
Follow the main recipe, omitting the tomatoes and adding a little water in their place. Once the mussels are cooked, discard the empty half each shell. Put the opened mussels On a backing sheet. If there is quite a lot of liquid left in the pan, boil rapidly for 5 minutes Until the mixture has almost evaporated.
Mix the breadcrumbs and the mixed herbs together with the onion mixture in the saucepan, To form a semi-sticky paste. Scatter over the mussels and place under a preheated grill Cook for 5 minutes. Garnish with lemon slices.
