250 g/8 oz. potatoes, roughly
chopped
250 g/8 oz. French beans,
trimmed
1 red onion, cut into thin
wedges
1 teaspoon ground cumin
1 teaspoon ground coriander
few cardamoms, crushed
1 red chilli, deseeded and
finely chopped
125 g/4 oz. okra, slice into
chunks
2 x 400 g/13 oz. cans
tomatoes
pinch of garam masala
Salt and pepper
coriander leaves,to garnish
Put the potatoes and beans into a large saucepan. Cover with water and boil for 10 minutes. Drain, reserving both the vegetables and the liquid.
Heat a nonstick wok, and dry-fry the onion for 5 minutes. Stir in the spices and cook for 1 minute. Add the potatoes, beans and little of the cooking liquid to the work. Stir in the chilli, Okra and canned tomatoes with their juice. Simmer for 20 minutes. Check and adjust the seasoning and add the garam masala. Simmer for 5 minutes more serve, Garnished with coriander leaves.
