Mussels with a Herb Crust

Preparation time: 10 minutes Cooking time: 20-25 minutes  Ingredients as above, except the tomatoes  50 g/2 or fresh wholemeal.  Breadcrumbs 2 teaspoons chopped mixed  Herbs  Lemon slices, to garnish  Follow the main recipe, omitting the tomatoes and adding a little water in their place.  Once the mussels are cooked, discard the empty half of each shell. Put the opened mussels On a baking sheet. If there is quite a lot of liquid left in the pan. Boil rapidly For 5 minutes until the mixture has almost evaporated.  Mix the breadcrumbs and the mixed herbs together with the onion mixture in the saucepan To form a semi-sticky paste. Scatter over the mussels and place under a preheated Grill. Cook for 5 minutes.  Garnish with lemon slices.
